Crockpot Chicken Creole Recipe

A great crockpot recipe is this crockpot chicken creole. It is hard to beat a good chicken recipe like this one. Try it and you will know why.

3 lbs. chicken thighs
1 cup celery, diced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
1 can sliced mushrooms
1 can tomatoes
1 tsp. garlic powder
1 tsp. sugar
1 tsp. Cajun seasoning
1/2 tsp. paprika
salt & pepper to taste
Louisiana hot sauce to taste
2 cups rice, cooked

Place the chicken in the bottom of the crockpot.

Combine remaining ingredients (except rice) & add to crockpot. Cook on high 4 to 5 hours or on low 7-8 hrs.

Cook rice according to package direction. Spoon Creole mixture over hot cooked rice.

INGREDIENTS:
1 1/2 pounds stew beef, lean, cut in small pieces
2 tablespoons olive oil
3 tablespoons flour
1 1/2 cups chopped onion
3 ribs celery, sliced
1 cup carrots, julienne or thinly sliced
1 sweet green bell pepper, chopped
1 sweet red bell pepper, chopped
1 teaspoon salt
1 teaspoon Cajun seasoning
1/4 teaspoon black pepper
2 cans (15 oz each) pinto beans, drained, rinsed
1 can (10 1/2 oz) condensed beef broth, undiluted
2 cans (14.5 ounces each) diced tomatoes, not drained
1 cup canned (drained) or thawed frozen corn kernels, optional

PREPARATION:
Toss the beef with flour. In a large skillet, heat oil over medium-high heat. Add beef and onion; sauté, stirring frequently, until well browned.In a 4 to 6-quart slow cooker, combine the celery, carrots, green and red bell pepper, seasonings, beans, broth, tomatoes, and the browned beef and onions. Cover and cook on high for 4 to 5 hours or set your crockpot to low and cook for about 8 to 10 hours. (Me I get too hungry and have to cook it on the high setting. You can add your corn about 1 hour before serving. Then serve up this great crockpot beef stew with some hot cornbread muffins. This is a crockpot recipe you hav to try.
